Low Carb Inside-Out Almond Joy Bites

Sweetened Condensed Milk Ingredients 

1. 2 1/2 cups unsweetened almond milk 
2. 1 1/2 cups confectioners sweetener 
3. 3 tbsp salted butter 
4. 1 tsp vanilla 

Almond Joy Ingredients 

1. 9-10 oz melted sugar free chocolate 
2. 1 cup pre-made sweetened condensed milk 
3. about 20 whole almonds 
4. 6 oz unsweetened coconut chips

 

Directons: 

1. In a medium sauce pan, heat unsweetened almond milk and sweetener to a boil.
2. Set on low heat (simmer), add butter and vanilla.
3. Cook on simmer for 1 1/2 - 2 hours and stir often.
4. Remove sweetened condense milk mix in medium bowl with coconut chips.
5. Take 2 tbsp mixture and place on parchment paper or silicon mold. 
6. Add 2 or 3 almonds on top
7. Add 2 tbsp melted sugar free chocolate on top
8. Refrigerate 10-15 minutes or freeze for 2-4 minutes.
