Low Carb Cinnamon Rolls

Ingredients: Dough

  • 2 cups mozzarella
  • 2 eggs
  • 1 cup almond flour
  • 1 tsp xanthum gum --> what I use Here  
  • 1/4 tsp pink salt 
  • 6 tbsp baking powder
  • 1/2 cup sweetener --> what I use Here

Ingredients: Cinnamon Sugar

  • 3-4 tsp cinnamon 
  • 1/3 cup sweetener 
  • 1/2 cup butter (softened or melted) **I prefer room temp**

Ingredients: Cream Frosting 

  • 1 tbsp heavy cream
  • 1/2 cup cream cheese (softened) 
  • 1/2 tsp vanilla 
  • 4-5 tbsp sweetener (add to taste) 

Directions:

  1. Preheat oven to 400
  2. Combine mozzarella & egg, microwave until melted.
  3. In separate bowl whisk together flour, gum, salt, powder and sweetener until evenly mix
  4. Pour wet ingredients into flour bowl and combine with wooden spoon or your hands until mixture becomes doughy 
  5. Flatten dough out onto parchment paper with wooden roller or your hands
  6. Once dough is evenly flattend, cut into vertical strips (depending on the width of your slice makes for smaller or larger rolls) *I cut mine about 2 inches apart* 
  7. Combine cinnamon sugar mixture; butter, cinnamon, sugar and lather onto dough
  8. Roll up each slice of dough individually creating your bread roll
  9. Rub butter into a 8x8 pan or smaller, place rolls onto pan tightly together 
  10. Bake for 20-25 minutes (depending on your elevation of where you live can give you more or less time in the oven) watch for browning on the top and bottom to show the rolls are finished
  11. Combine frosting ingredients while rolls are baking; cream cheese, heavy cream, extracts and sweetener. **I enjoy a very sweet rolls so I always add more sweetener than recipe calls for**  
  12. Pour cream cheese frosting over rolls and bake an additional 5-10 minutes. **we prefer hot so the frosting melts all over**
  13. Sprinkle extra cinnamon and sugar on top **my boys secret**

Keto-Ki Secret: These delicious cinnamon rolls are so yummy fresh straight from the oven, but our family secret is to pre make them at night and warm them up for brunch the next morning! They are absolutely perfect, it's almost as if the frosting soaking into the dough gives it an extra true cinnamon bun flavor/texture !
