Beef Stroganoff

Beef Stroganoff

Ingredients:

  • 2 lbs angus ground beef 85/15
  • 1/4 yellow onion 
  • 8 oz mushrooms 
  • 1/4 C. beef broth -> what I use Here  
  • 3 tbsp worcestershire sauce
  • 1 tsp xanthem gum 
  • 2 tbsp butter
  • 1 tbsp avocado oil  
  • 1 C. sour cream 
  • 2 tbsp lemon juice 
  • 1 tbsp paprika / chilli powder 
  • 1 tsp pink salt 
  • + pepper and parsley 

 

Directions:

  1.  In skillet on medium and sauté mushrooms in avocado oil for 10-12 minutes, set to side. 
  2. Melt butter in pan on high and add ground beef, onion, broth, sauce 
  3. Cook until meat is browned; add spices, sour cream, mushrooms and lemon juice. (add gum to thicken mixture)
  4. Combined ingredients, warm and serve
  5. Optional: avocado, extra sour cream & cheese
